Mexican Chicken Parmi

Mexican Parmi this is a delicious variation on the popular Australian variation on the Chicken Parmigiana. Instead of using Italian flavours the breaded chicken fillet is smothered in Mexican salsa and cheese before being put under the grill to brown. The Parmi is served with a dob of sour cream and guacamole. Other variations may include Mexican bean topping and corn chips to resemble more of a nacho.
